Day in the life of a Wingers’ store manager

Denise Baggott is the store manager at Wingers’ Aldridge restaurant in Birmingham. Denise’s has worked with Wingers founders – the Sunner family – for several years and this meant she was ideally placed to manage the high-street outlet since opening in August 2023.

Wingers – the Chicken Wing Company – is a fast growing franchise brand with ambitions to open 50 sites across the UK. The popular fresh buttermilk fried chicken restaurant and delivery concept has really taken off, and Wingers already has six restaurants successfully trading in the Midlands with ten more franchise outlets set to open soon.

Denise explains:

“Originally, I ran my own café before joining brothers Amran, Dylan and their dad Bill Sunner in the family sandwich business almost five years ago. When that closed and Wingers launched during the pandemic, I worked in the Lichfield restaurant and have recently moved to the Aldridge branch to support new franchisees Jack and Kem Davis.”

“I felt it was really important that Jack, who also runs his own electrical business and has a young family, could leave me in-charge so he had time to focus on his other commitments too. Therefore, I take responsibility for inventories, ordering stock, taking deliveries, staff rotas, front of house and make sure the restaurant is always kept clean and tidy, plus any other troubleshooting needed throughout the day. We serve alcohol, so I also ensure staff compliance in relation to who can sell this to customers. Jack and I talk on a daily basis but it means he’s gone from being in store most days, to just popping in from time to time.”

“I love my role! The interaction with customers always creates a buzz and I like the challenge of managing the restaurant. Good staff management is key, and it’s important to create a great working environment for everyone, so we try and be flexible and play to everyone’s strengths. We have a great team of 15 people here. We have two team leaders plus many of our staff are college students so evening and flexible work hours suits them.”

“I think the secret to our success is that everyone gets on well. For me, this comes down to personality. I think if people like you, they want to work with you. If everyone’s pulling in the same direction it helps for things to run smoothly.”

“If I had to give advice to other women looking to move into the QSR industry, I would say there are lots of opportunities. It’s a great industry for a young person and training is provided which enables people to progress at their own pace. At the top end of the career ladder is a store manager role to aim for. If funds are available, there is even the chance to become a franchisee and store owner. It’s a good business to get into as everyone needs to eat!”
